People around the house know, I love potatoes. I love potato fries, potato salad, Italian style potatoes (my favorite), mashed potatoes, potato croquettes – I just love it. I am always on the lookout for the best potato recipes out there, and I saw this easy Baked Potato Salad recipe on FunnySpoon. Looks oh so yummy – and super easy!!!

Here’s what you need:
1/4 cup chives
4 potato(es)
1 pkg. Daisy Sour Cream (8 oz.)
1/2 cup Hellman’s Mayonnaise
1 pkg. Hormel Microwave Ready Bacon (12 oz.)
1 pkg. Sargento Shredded Sharp Cheddar Cheese (8 oz.)

Cooking Instructions:
1. Poke holes in potatoes and microwave for 12 minutes. Rinse under cold water, then refrigerate until cool. Once cool, dice (with peels) into small cubes and place in large bowl.
2. Prepare bacon according to package directions. Add to bowl.
3. Add cheese, mayo, sour cream, and chopped chives. Stir until blended. Best if refrigerated before serving at least an hour.

See, so easy!?! I think this would be perfect for welcoming fall – I don’t know, there’s just something so cozy about a potato salad that it always reminds me of fall (while fried and grilled potatoes remind me of summer).
